Creamy goat cheese polenta with mushrooms

4 1/2 cups milk
5 oz instant polenta flour
5 oz goat cheese
8 oz mushrooms, sautéed in olive oil
Salt

Pour milk with a pinch of salt into a medium size pot and bring to a boil. Add the polenta and mix the polenta into the milk with a whisk. Once the polenta is well amalgamated and there are no lumps, add the goat cheese and mix everything together using a whist. The mixture needs to be creamy–neither liquid nor firm. If the mixture becomes too firm, add milk; if it's too liquidy, add polenta flour. Cook for 5 minutes. Pour onto a disk and top with the sautéed mushrooms. For added flavor, sprinkle Parmigiano Reggiano cheese on top.
