50 Delicious Maple Recipes

Breakfast, lunch, dinner and dessert, the versatile products from the Maple tree make for some mighty tasty recipes. From co*cktails to donuts, from sauces to sushi, the great taste of Maple is a wonderful accompaniment that brings out the best in meats, cakes and beverages.

There are over 128 species of Maple Trees, only one of which appears in the Southern Hemisphere.

Maple syrup is a syrup usually made from the xylem sap of sugar maple (2% sugar), black maple (1% sugar), red maple (1% sugar), silver maple (1% sugar) or the ash leafed maple trees (1% sugar). In cold climates, these trees store starch in their trunks and roots before the winter; the starch is then converted to sugar that rises in the sap in the spring. Cold nights and warm days are required for sap to flow properly from a Maple tree. Maple trees can be tapped by boring holes into their trunks and collecting the exuded sap.

Maple syrup is a product of North America exclusively. Most Maple Syrup comes from Quebec (the largest producer), Vermont, Ontario, New York and Maine. It takes about 42 quarts of sugar maple sap to make approximately 1 quart of maple syrup.

Maple sugar is what remains after the sap of the sugar maple is boiled for longer than is needed to create maple syrup or maple taffy. Maple sugar is approximately 90% sucrose. Maple sugar has been exported for use worldwide since since 1630!

FAQs

What happens if you boil sap too long? ›

When the sap reaches 66.9% sugar, it is then maple syrup. Maple syrup that is boiled too long will crystallize and maple syrup that isn't boiled long enough will spoil quickly and will be watery because the concentration of sugar in the syrup will be too low.

What happens if you don't refrigerate maple syrup? ›

But once opened, pure maple syrup should be stored in the refrigerator. This is less about safety (the heat packing process prevents contamination) than it is about quality, as leaving it out increases the likelihood of mold.

How much syrup from 5 gallons of sap? ›

But just as an FYI – 5 gallons of sap usually end up resulting in approximately 16oz maple syrup. If you tap one sugar maple tree you will normally get about 10-20 gallons of sap in a season.

How long will sap last before boiling? ›

Storing your sap

The sap should be stored at a temperature of 38 degrees F or colder, used within 7 days of collection and boiled prior to use to eliminate any possible bacteria growth. If there is still snow on the ground, you may keep the storage containers outside, located in the shade, and packed with snow.

What is the white stuff floating in my maple syrup? ›

White bubbles are air bubbles that can appear if syrup has been shaken, often during transport. The bubbles are completely safe and there is no reason for concern. The bubbles will disappear over time but it can take a while depending on how vigorously the bottles were shaken.

Can I stop boiling sap and start again? ›

Can you stop in the middle of boiling maple sap, then start up again? Yes, since it typically requires long periods of time to boil down sap, it is quite common to boil the sap for several hours one day, then cover the sap or put it into a refrigerated environment overnight, and then continue boiling the next day.

Does maple syrup spike blood sugar? ›

Maple syrup gives you carbohydrates in the form of sugars without fiber. As a result, maple syrup can cause swings in blood sugar and insulin levels. Insulin is a hormone that moves sugar in our blood to cells that convert it to energy. People with diabetes may have bad side effects from the sugar in maple syrup.

Is it OK to drink maple sap directly out of the tree? ›

Although it is possible that probiotics could become introduced into the sap, it is also possible that harmful bacteria could make their way in. For this reason, I always recommend filtering and pasteurizing the sap before drinking—just to be safe.

Is cloudy sap OK to boil? ›

Keep sap cool and filter before boiling to remove debris. Discard yellow or cloudy sap – do not mix it with good, clear sap. Watch for early bud break of red maple. This will cause buddy sap and produce an off-flavor in the syrup.

What is the rule of 86 maple syrup? ›

The Jones “Rule of 86” was devised in 1946 by C.H. Jones, a scientist and educator at the University of Vermont. The gist of the rule is that ifone divides 86 by the sugar content of sap, you can estimate the amount of sap required to produce a gallon of syrup.

What happens if you boil spoiled maple sap? ›
