This Cranberry Orange Bundt Cakewith White Chocolate Glaze just might be my new favorite dessert. I love anything with cranberry and orange, truly I do.Pair them with white chocolate and I’m a gonner, seriously. Last year I shared a recipe for Cranberry Orange Bliss Barsthat has shown up a few times in my dreams. Embarrassing, I know. I need an intervention!This cake reminds me of the bars, but in bundt cake form. We loved it, and my daughter requested it for Christmas morning.

1. Preheat your oven to 325 degrees.
2. Into a small mixing bowl place 2 C flour, 2 tspbaking powder and 1/4 tsp salt. Toss them together to combine.

3. Zest 3 Tb of orange peel. (You’ll need about 3 medium oranges to make that happen). Reserve the oranges for the glaze.
4. Into your stand mixer or large mixing bowl place 1 C softened butter, 1 C brown sugar and 1/2 C white sugar. Beat together until fluffy, 2 minutes should do it.

5. Add 4 eggs and mix for 1 minute. Add the orange peel and 1 tsp vanilla. Mix until combined. Don’t worry if the batter looks a little funky at this point. 🙂

6. Add the flour mixture to the mixing bowl and beat for an additional minute. Be sure toscrape the bottom of the bowl with a rubber spatula to ensure all the ingredients are well incorporated.

7. Add 1 C white chocolate chips…

and 1 1/2 C fresh or frozen cranberries. Don’t they look beautiful. Such a gorgeous color!

8. Spray a bundt pan GENEROUSLY with Cooking Spray that has flour added to it, like this Baker’s Joy or Pam Cooking Spray with Flour.

9. Carefully spoon the batter into the pan and smooth out the top. This is a pretty thick batter, as far as bundt cakes go.
10. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

11. Allow the pan to cool on the counter for 10 minutes. Then lay a wire rack over the top of the pan and carefully invert the cake onto it.

12. Vwalla! Mine actually stuck just a tiny bit along one side, dang it. Don’t be like me. Make sure your pan is well sprayed!
13. Allow the cake to cool completely.

14. Into a medium-sized mixing bowl place 1 C white chocolate chips, 3 Tb orange juice and a dash of salt. Stir it over medium high heat until the chocolate has melted and is nice and smooth.

15. Drizzle it onto the cake. Yum!

2 C flour

2 tsp baking powder

1/4 tsp salt

3 Tb orange zest

6 Tb orange juice, divided

1 C butter, softened

1 C brown sugar

1/2 C white sugar

4 eggs

1 tsp vanilla

1 (12 ounce) package white chocolate chips, divided

1 1/2 C fresh or frozen cranberries
